A Goodness Gracious staple; cookies!

I love a good cookie! These ones certainly tick the box with their rich chocolate taste, chewy texture and fabulous health benefits. My mother and I enjoyed a couple of these for afternoon tea today along with a pot of green tea. We then went of for a game of tennis and felt wonderfully energised!

I have made these from Hazelnuts, which are a great source of healthy fats for our heart, vitamin E for our skin and magnesium for our muscles and bones. Hazelnuts also have a beautiful rich flavour that pairs perfectly with bittersweet chocolate. These cookies also have a good dose of antioxidants, are low GI and have an energy boosting effect, so a perfect pre-workout snack.

Chocolate hazelnut cookies

1 C hazelnut meal
1.5 C desiccated coconut
1/4 C coconut oil
1/2 C cacao powder
1/4 C coconut sugar
2 T plant milk

Method

Pre heat your oven to 180 degrees celsius. Line a baking tray with baking paper.

Combine all ingredients in a food processor and process until combined, roughly 1-2 minutes. The mixture should besticky yet easy to roll into a ball. Now roll the mixture into even sized balls, however large or small you would like your cookies as these will not spread much when cooked. I made 18 small cookies.

Place in the oven for 10 minutes and then cool on a wire rack.

These are best kept in an airtight container in a cool dry place.
